Re-Vamped Yummy Easter Treats

YEAH!!! The guy came by today to wire our house for fiber optic internet! Weeee! I feel like a child in a candy store. That's also why I'm write this post at nearly midnight, when last night I would have been fast asleep! ;)

Anyway...When we were little we used to make these homemade chocolate covered marshmallows rolled in nuts, sprinkles and dyed coconut. YUM!! I think we made them every year for Easter. There one of those treats that you keep making, not because they are the most delicious to die for dessert ever tasted, but because of the memories. :)
So yesterday when I went to drop Josie off at the babysitter, I heard they were having an Easter Party. 

So after dinner Josie and I got to it!! She was such a big help, really!!

They are sooooo easy to make and is you use mini marshmallows instead of the big ones we used to use, they are the perfect size for toddlers. Just put the marshmallows on toothpicks, insert into styrofoam. Dye coconut with only 1-2 drops of food coloring in plastic bag and melt chocolate (all I had was semisweet). Dunk marshmallows into chocolate and then coconut. Cool in freezer for 5 mins. Store in fridge until ready to gobble up! 







 All ready for her party!!

Apparently they were a big hit! She took 62 60 mini "Yummy Easter Treats" and came back with none!

  3. You have to use semi-sweet chocolate chips as milk chocolate ones won't set up :)
